Zucchini

Lemongrass is an amazing versatile herb. It inhibits microbial and bacterial growth in the body and cures infections in the colon, stomach, urinary tract and respiratory system. Its leaves and stems are high in folic acid and essential B vitamins such as B5, B6, B1. It contains many anti-oxidant minerals and vitamins such as vitamin C, vitamin A, potassium, zinc, calcium, iron, manganese, copper, and magnesium. It is highly effective in flushing toxins and waste out of the body; improving the function of many different organs including the liver, spleen and kidneys. Zucchini has a high content of vitamin C, carbohydrates, protein, fiber, potassium, folate, and vitamin A, boosting eye health, aiding weight loss, and is anti-oxidant.

List of Ingredients

2 TBSP lemongrass dried Rock salt – 1 tsp
Zucchini or courgetti – one and half Black pepper ½ tsp
Rice 1 1/2 cups (Basmati – white or brown) Cumin seeds – 1 tbsp
Water 3 1/2 cups Oil- sunflower or peanut oil – 1tbsp

Bring 1 cup water to boil and steep lemongrass in it for 10 min and strain. Boil remaining water and put washed soaked basmati rice in it.

Add strained lemongrass tea, salt and pepper, cover and simmer for 10-15 min. Rice is ready

Heat Oil and add cumin seeds. Stir in chopped, cubed zucchini and cook for 3-4 mins, enough to char the sides.

Fold into the rice and serve with a soup or curry.
