Zucchini & Lemongrass Rice
Lemongrass is an amazing versatile herb. It inhibits microbial and bacterial growth in the body and cures infections in the colon, stomach, urinary tract and respiratory system. List of Ingredients
|2 TBSP lemongrass dried
||Rock salt – 1 tsp
|Zucchini or courgetti – one and half
||Black pepper ½ tsp
|Rice 1 1/2 cups (Basmati – white or brown)
||Cumin seeds – 1 tbsp
|Water 3 1/2 cups
||Oil- sunflower or peanut oil – 1tbsp
Bring 1 cup water to boil and steep lemongrass in it for 10 min and strain. Boil remaining water and put washed soaked basmati rice in it.
Add strained lemongrass tea, salt and pepper, cover and simmer for 10-15 min. Rice is ready
Heat Oil and add cumin seeds. Stir in chopped, cubed zucchini and cook for 3-4 mins, enough to char the sides.
Fold into the rice and serve with a soup or curry.
